Senior Sous Chef (Luxury Beach Restaurant)

A Senior Sous Chef with Waldorf Astoria Hotels and Resorts is responsible for overseeing the kitchen operations of the Beach Restaurant, ensuring the highest standards of food quality, presentation, and service.

This role involves menu development, staff training, cost control, and maintaining a safe and hygienic kitchen environment. The Senior Sous Chef will work closely with the Executive Chef to create innovative and memorable dining experiences that reflect the luxury and exclusivity of the property.

What will I be doing

As a Senior Sous Chef, you are responsible for managing all aspects of the kitchen, starting with menu development, staff training, cost control, and maintaining a safe and hygienic kitchen environment. As a Senior Sous Chef you will work closely with the Executive Chef to create innovative and unforgettable dining experiences for all our guests which reflects on the luxury and exclusivity of the property. Specifically, you will be responsible for performing the following tasks to the highest standards:

Supervise and coordinate all kitchen activities to ensure efficient and consistent food production.
Maintain high culinary standards, ensuring dishes meet luxury hotel quality and presentation expectations.
Assist in menu planning and development, incorporating seasonal and locally sourced ingredients.
Monitor portion control and minimize waste to ensure cost efficiency.
Ensure all dishes are prepared in accordance with hygiene and safety regulations.
Lead, mentor, and train the kitchen brigade to maintain a highly skilled and motivated team.
Conduct regular team briefings, performance evaluations, and skill development programs.
Foster a positive and professional kitchen environment that promotes teamwork and innovation.
Assist in the recruitment and onboarding of new kitchen staff.
Assist in budgeting, forecasting, and cost control to ensure financial targets are met.
Manage inventory, purchasing, and stock rotation to maintain quality and efficiency.
Implement and monitor cost-effective kitchen operations without compromising quality.
Ensure compliance with all food safety, sanitation, and health regulations (HACCP standards).
Conduct regular inspections to maintain the highest standards of cleanliness and hygiene in the kitchen.
Implement and uphold safety protocols to provide a secure working environment for the team.
Work closely with the Food & Beverage team to create tailored dining experiences for guests.
Engage with guests when required, responding to feedback and ensuring an exceptional culinary journey.

Minimum 3-5 years of experience in a high-end or luxury hotel, luxury beach restaurant, or an equivalent setting.
Proven experience in managing and mentoring a diverse kitchen team, ensuring high standards of food production, consistency, and teamwork in a high-energy environment.
Strong understanding of food trends, guest preferences, and cultural sensitivity in culinary practices.
Formal culinary training or equivalent certifications.
Exceptional leadership and organizational skills.
Strong creativity and passion for culinary innovation.
Ability to manage stress in a high-pressure environment.
Excellent communication and interpersonal skills.
Keen eye for detail and commitment to quality.
Ability to work a variety of shifts including weekends, days, afternoons and evenings
