We are seeking an experienced Steward & Hygiene Manager to lead the stewarding department, ensuring exceptional cleanliness, organization, and efficiency in all food and beverage areas. Reporting to the Executive Chef, this role plays a vital part in maintaining the highest hygiene standards, optimizing operations, and supporting an outstanding dining experience across the resort.

 

Key Responsibilities:

Develop and implement standard operating procedures (SOPs) for stewarding and hygiene operations.
Lead, train, and mentor the stewarding team to uphold company policies and best practices.
Maintain inventory, manage procurement, and ensure all stewarding supplies and equipment are stocked and in excellent condition.
Work closely with culinary and service teams to ensure seamless food and beverage operations across all dining venues.
Enforce rigorous cleanliness, sanitation, and hygiene protocols, ensuring all areas comply with HACCP, food safety regulations, and company standards.
Conduct regular audits and inspections to identify potential risks, maintenance needs, or areas for improvement.
Manage the stewarding department budget, monitor expenses, and implement cost-effective solutions without compromising quality.
Stay up to date with health and safety regulations and drive continuous improvement initiatives.
Address and resolve any hygiene or stewarding-related concerns from guests or internal teams in a timely and professional manner.
Qualifications
Proven experience in a similar role within a luxury resort, fine-dining, or large-scale hospitality environment.
Strong leadership and team development skills with a focus on training and operational efficiency.
Expertise in HACCP standards, food safety regulations, and kitchen hygiene protocols.
Exceptional organizational and problem-solving skills.
Ability to collaborate effectively with multiple departments to enhance service quality.
Preferred: Certifications in HACCP, ISO 22000, or food safety management.
Experience in budget planning and cost control is a plus.
