Head Butcher

Reports to Executive Chef for day to day operation.
Responsible for the entire operation within the butchery section
Responsible for the correct and timely kitchen preparation for all butchery items
Able to prepare pre-cut meat & fish products as requirement of kitchen, daily restaurants, parties etc.
In charge of cleanliness of meat and fish preparation rooms
In charge in proper storage of meat, chicken & fish items in the freezers and fridges.
Responsible for sanitation of butchery rooms and taking care of band saw, mincer, meat cleaver, knives and all required utensils.
Monitor all duty schedules in the butchery kitchen section
Responsible for the correct and timely kitchen preparation for all butchery items

Frequently tours through Butchery facilities ensuring the highest possible hygiene and maintenance standards
